Sopaipillas, Pebre & Ramson Mayo with Pancho Cardenas

Sopaipillas:

800 white flour (any)

400 pumpkin (your favorite kind)

80 pork fat

20 salt water (bit by bit)


Method: add pumpkin to the white flour, pour in the pork fat and start mixing. Add water for consistency. Rest in fridge.


Pebre:

2 big tomatoes

1 big onion

Olive oil

Vinegar

Parsley

Coriander


Method: chop all together very finely to make a kind of "salsa"


Ramson Mayo:

2 whole eggs

350 rapeseed oil (or any neutral)

150 ramson oil

Salt

Vinegar


Method: add the eggs, salt and vinegar and whilst blitzing pour in the oil


Ramson Oil: 300 fresh ramson 450 rapeseed oil (or any neutral)

Method: Blitz together for 8 min, strain and use


Serve like on the photo with some seasonal green herbs!
