Mediterranean Shakshuka, Pita Sticks and Salad with Andras Dietrich
Ingredients for Shakshuka:
2 tbsp olive oil
2 white onion small diced
6 Large plum tomatoes diced 1 cm pieces
2 red pepper sliced 1 cm thick (I used Kapia peppers)
2 garlic chopped
1 red chilli chopped
Salt, Pepper
Oregano 1 tsp
½ tsp cumin
200ml water
100g feta cheese crumbled
8-10 black olives chopped
A handful of fresh flat-leaf parsley roughly chopped
4 eggs
Method:
1. Saute onion, garlic, chilli for 4-5 minutes until golden medium-high heat
2. Add red peppers saute for another 2 minutes
3. Add the diced tomatoes turn up the heat to high
4. Let it cook the tomatoes a few minutes until their liquid evaporates
5. Add oregano, cumin, salt, pepper
6. Add 200 ml water and keep cooking on high heat until everything starts to break down and starts to thicken to a more “saucy” consistency roughly 8 minutes
7. Add your chopped olives and roughly chopped parsley
8. Stir ones turn down the heat to low
9. Create small holes in the sauce and break the eggs into it
10. Put the crumbled feta on top cover it
11. The eggs will cook in 4-5 minutes and will be still runny inside
Zatar Pita Breadsticks for Dipping:
Pita bread sliced 2 cm thick “sticks” lengthwise
1 tbsp olive oil
Salt pepper
1 tbsp zaatar spice
Method:
Mix with the oil and spices and bake it 7-8 minutes on 200C until crispy
Village Salad with Panfried Halloumi:
Salad leaf 2 handful
1 tomato cut into big pieces
Half red onion sliced thinly
Half lemon juiced
2 tbsp olive oil
Salt and pepper
Mix all ingredients
1 Packet of halloumi cut to 1,5 cm slices
Last-minute before serving:
Put 1 tablespoon olive oil in a large preheated pan
Add the halloumi slices and fry for 2 minutes until is deep golden crust forms on it
Flip them and cook for another 1-minute serve immediately
